HOLIDAY SPICED PERSIMMON PUREE + COCKTAIL RECIPE

Now that you’ve got the puree.
Try this toasty seasonal tiki inspired number:

1 1/2 ounce spiced rum
1/2 ounce Apple Brandy
1 ounce spiced persimmon puree
1/2 lemon juice
3 dashes of tiki bitters
.
Shake all the ingredients and strain into a glass filled with crushed ice. Garnish with a slice of fresh persimmon.

This underrated fruit deserves as much respect as pumpkins and cranberries, you just need to know which you’re dealing with: while non-astringent varieties (fuyu) can be eaten, firm and crisp, the astringent kind (hashiya) – rich, sweet, spicy – are mouth-puckeringly tart until fully ripe.

Spiced Persimmon Puree

2 ripe fuyu persimmons
1/2 cup maple syrup
1/2 cup water
1 cinnamon stick
5 peppercorns
2 cardamom pods
5 cloves/ nutmeg
Bring to boil, cool and strain.
